The Eraz Rouge winemaking process begins with a carefully hand-selected harvest to guarantee grapes of the highest quality. After pressing and de-stemming, the grapes are fermented in stainless steel tanks, with an extended maceration of around 30 days. This stage is accompanied by frequent pumping-over to extract aromas and intensify structure. Natural malolactic fermentation is completed in the vats before ageing begins. For aging, the wine rests in French oak barrels for 12 months, bringing out subtle notes of vanilla and caramel, while preserving the freshness of fruity aromas. This care gives the wine a silky texture and balanced complexity. In terms of food pairing, Eraz Rouge is perfect with grilled meats, tender duck breast or simmered dishes in sauce. It also goes well with mature cheeses and charcuterie.
