The winemaking process for this wine includes pressing and destemming of the grapes, followed by fermentation in steel tanks with maceration for around 60 days and numerous pump-overs of the must. Natural malolactic fermentation took place in steel tanks and was completed in early summer 2016.
For aging, the wine was placed in Slovenian oak barrels with a capacity of 25 hectoliters from June 2016. It was then aged for around 5 years before entering the preparatory stages of bottling and marketing.
When it comes to food pairings, this wine excels in traditional cuisine, notably as the main ingredient in “Risotto all’Amarone” or as an accompaniment to full-bodied game steaks and mature cheeses.
